Yes. Stage colours are applied by column position, not by stage name, so a board with Application, Discovery booked, Proposal and Enrolled picks them up the same way as a generic sales pipeline. Add or rename a stage later and it still gets a colour.
One board design applies across the account, so every pipeline shares the same look. That is usually what you want: a coach switching between an enrolment pipeline and a renewals pipeline sees one consistent product.
